It is revealed that in ancient India laddos were prepared specifically for sick and weak patients for medicinal purposes. Although it was considered a healthy booster to enhance energy levels in patients with its healthy concoction of ingredients such as chickpea, dates, desi ghee, nuts, and seeds, Many times, specific medicines are mixed with these laddoos so the patients can easily consume the bitter medicines.

And hence, these laddoos also served as the best snacks for warriors & travelers because of their ease of transportation and long shelf life.

Preparation of Besan ke Laddo:

This Indian dessert is made by slow roasting besan in clarified butter till it turns light golden and a nutty fragrance starts coming from the besan. Now, this mixture is mixed with powdered sugar, cardamom powder, and nuts of your choice. And while the mixture is still warm, they are shaped in the form of small balls with the help of greased palm.

Tips to prepare your Laddos:

Patience is the key to success in making delicious laddo.

  1. Roasting -The roasting part is the most important one. If the roasting of besan/chickpea flour is not done properly, it will lead to a raw-tasting besan laddu. And overly roasted besan will give you a bitter taste. So roast the besan until you get a nutty aromatic fragrance.
  2. Stirring- The besan should be stirred continuously without fail, mainly in the later stage, as there are chances of burning the besan in a later stage. so be cautious while roasting the besan.
  3. Take a thick bottom pan, which prevents your besan from burning quickly and will help roast the besan for your laddos.

  • thick bottom pan
  • 1/2 kg besan/chickpea flour
  • 1/2 cup ghee/clarified butter
  • 4-6 pc green cardamom
  • 1 cup sugar
  • 1 tbsp almonds (thinly sliced)
  • 1 tbsp Cashew nuts (chopped)
  1. Grind the sugar with cardamom pods and keep aside.

  2. In a thick bottom pan, add 2 tbsp clarified butter and slightly fry the sliced almonds and melons seeds separately. keep them aside once done

  3. Lower the flame and pour besan in ghee, keep roasting it for 5 minutes till besan turn little deeper in colour.

  4. Now add rest of the ghee and continue stirring the besan till the ghee incorporates well and continue stirto roast the besan on low flame

  5. While roasting if mixture turns too dry, add 1- 2 tbsp of ghee.

  6. Continue roasting the besan for 20- 25 minutes till besan start releasing ghee from it.( the time may be more or less depending on the besan quality, thickness of pan and intensity of heat.

  7. Continue to roast for 5 minutes or more till a nutty smell arouses from the mixture. don't roast too much otherwise the laddu will turn bitter

  8. Remove from the heat and transfer the mixture into a large bowl, allowing to cool slightly.

  9. Now add the roasted almonds and cashew nuts in the mixture, mix well.

  10. Let the mixture cools to a warm temperature and then add the powdered sugar and mix again to form a homogenous mixture. (Don't add suagr when the mixture is hot as the sugar melts instantly and will ruin the laddo.)

  11. Grease your palm with ghee/clarified butter and make small size laddos.

  12. Store the prepared laddos in an airtight container at room temperature and can be consumed up to 3 weeks.
