

A traditional mutton stew right from granny’s kitchen. To prepare mutton stew mixed meat pieces are taken both tender and some pieces with bones this helps in adding flavor to the whole dish which is further cooked in the slow cooking process at low flame. There are different ways of preparing stew throughout the world but some of the well-known methods are:
- Authentic way: In this type of cooking, meat pieces with all other ingredients are put together in a clay pot and sealed with flour dough. This pot is then slow-cooked over charcoal. And after a couple of hours, the seal is broken, and scrumptious mutton stew is served with Roti, Naan, or Rice.
2. The Regular way: Here steps are followed by adding whole spices, browning onions followed by adding mutton and other spices, cooking it for some time, and pressure cooking in a cooker or pan-covered cook.

It’s an authentic mutton stew cooked by my granny. She used to cook mutton and colocasia together, and the duo blend is a mouthwatering treat for us.
Here mutton is cooked with onions, tomatoes, ginger garlic paste, coriander powder, cumin powder, chilly powder, whole cumin, peppercorn, bay leaf, and green cardamom. The Colocasia roots are stir-fried with salt and spices and cooked till tender then mixed with cooked mutton. The stew gravy will be little watery. It was garnished with fresh coriander.

- 1/2 kg Mutton (Take mixed pieces with flesh & bones)
- 250 gm colocasia
- 2 pc onions (medium size, roughly chopped )
- 1 tbsp garlic paste
- 1/2 tbsp ginger paste
- 1 pc tomato (chopped)
- 1/4 cup refined oil/olive oil
- 1 pc bayleaf
- 2 pod green cardamom
- 2-4 pc cloves
- 1 inch cinnamon stick
- 1 tsp crushed roasted cumin/cumin powder
- 1 tsp crushed roasted coriander/coriander powder
- 1/2 tsp chilly powder
- 1/2 tsp turmeric powder
- 1 tsp salt(or as per taste)
Peel and cut the colocasia in cube shape of approx 1 inch
Now take a shallow pan, heat it, add 1-2 tbsp of oil and saute the colocasia with salt and red chilly powder for 5 minutes. keep them aside
In a pressure cooker or a thick bottom wide pan add 1/4 cup oi, heat it and then add all whole spices(bay leaf, cardamom, cloves, cinnamon stick)
Now add chopped onions and saute them till onions turn translucent and soft
Then add ginger garlic paste and fry again for 2-3 minutes
Now add all powder spices( cumin powder, coriander powder, red chilly powder, turmeric powder, salt) mix well and stir fry for 3-4 minutes.Add some water if the mixture seems dry.
Add chopped tomatoes and mix again.
Now add 1/4 cup water and cover the lid for 5-8 minutes, till tomatoes turn soft and oil separates
Now add washed mutton pieces mix it well and cook for 5 more minutes with lid open till all the mixture incorporates well with the mutton
Now add1/4 – 1/2 cup water and cover the lid , and cook them till mutton turn litle tender
Now mix the colocasia and cook them again till colocasia turn soft and soak all the mutton juices.
Give them a good mix , taste salt and adjust it and serve it hot with steamed rice, roti or bread as per your preferences.
