About Roasted Ratatouille Chicken

It’s a one-pot lunch/ dinner made with seasonal vegetables, perfect for summer. This dish is said to be originated in the eighteenth century in the Provence countryside. The word ratatouille emerges from two words, “rata” & touiller.” In French, “rata” refers to a course stew, whereas “touiller” means tossing or action of mixing the ingredients. This dish contains all the goodness of vegetables and chicken, making it a complete meal that is nutritious and healthy at the same time. Vegetables authentically used for this dish are – eggplants, zucchini, ripe, juicy tomatoes, red and yellow bell pepper, capsicum, and onions. It is seasoned with grated garlic, ginger, and seasoning.

Roasted Ratatouille Chicken

Roasted ratatouille Chicken is a popular french recipe made from eggplants, zucchini, ripe, juicy tomatoes, red and yellow bell pepper, capsicum, and onions and chicken.

  • 100 gm Zucchini
  • 100 gm Eggplant
  • 50 gm Red bell pepper
  • 50 gm Yellow bell pepper
  • 50 gm Capsicum
  • 50 gm Deseeded tomatoes
  • 100 gm Onion 1 large cut into wedges
  • 1 inch Ginger 1inch (grated)
  • 5-6 cloves Garlic (crushed)
  • 2 tsp Crushed peppercorns 1 tsp (freshly crushed)
  • 2 tsp chilly flakes (Crushed )
  • 1 tbsp white Vinegar
  • 2 tbsp Olive oil
  • 2 tsp Salt (as per taste)
  1. Marinate all vegetables and chicken in a pot with all ingredients. And keep it aside for 1/2 hour- 1 hour ( or more if you want more tender chicken)

  2. Preheat oven @ 200°© and keep the marinated chicken and vegetables in oven

  3. Drizzle some more Olive oil over the chicken and veggies

  4. Bake for 20-30 minutes or till done. You can grill for 5-10 more minutes if you want more grilled veggies and meat .

It’s rich in protein, fiber, vitamins, and minerals….so just munch on guilt-free.
