This campaign was started by a Delhite boy Shashank Aggarwal in 2012. And he has made people around the globe follow him. As per reports, food lovers and bloggers from different parts of the world, like New Zealand, Los Angeles, Sweden, Singapore, etc., have participated and posted pictures with their favorite Chole Bhature.

Preparation of Chole bhature recipe

To make Chole bhature, White/Black chickpeas are soaked overnight and then boiled with salt, onion, and turmeric. Later masala is prepared with fried onion, ginger garlic paste, tomatoes, dry Indian powder spices, and boiled chickpeas are added and mixed well. Served with chopped coriander and green chilies on top.

To make bhature, the refined flour is mixed with salt, baking soda, and yogurt. With the help of little water at a time, soft, pliable dough is made. It is left to rest for 1/2- 1 hour, and then it is rolled in disc-shaped and deep fried to make fluffy bhature.

Bhature

  • 2 cup refined flour
  • 1/4 tsp baking Soda
  • 1/2 tsp salt
  • 1/4 cup yogurt
  • water for kneading

Cooking/Softening Chole in Pressure cooker

  • 1 cup chickpeas
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp turmeric powder
  • 1/2 onion medium size (chopped)

For Chole Preparation

  • 2-3 tbsp oil
  • 1 pc Bayleaf
  • 1 pod Black cardamom
  • 2-3 pod green cardamom
  • 3-4 pc cloves
  • 1 tsp cumin seed
  • 1 inch cinnamon stick
  • 1 pc medium onion (finely chopped)
  • 1 tbsp ginger garlic paste
  • 1 big tomato (finelly chopped)
  • 1/4 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp chilly powder
  • 1/2 tsp garam masala powder
  • 1/4 tsp salt (can adjust as per taste)
  • 2 tbsp coriander (chopped)

For tempering

  • 1 tbsp clarified butter
  • 1/2 tsp cumin seed
  • 1 pc dry red chilly

Bhature

  1. In a large bowl take 2 cup refined flour, salt, baking soda as mentioned in the ingredient list and mix well,

  2. Now add curd and mix well

  3. Then add little water at a time to knead a soft and pliable dough. later grease the dough with oil, cover and rest it for 1 hour

  4. Now after 1 hour, punch it and knead it again

  5. Take a small ball sized dough and make a ball without any cracks, then roll it slightly thick (apply oil while rolling it to avoid sticking on the rolling board)

  6. Meanwhile heat the oil in a big wok and drop the rolled disc into the hot oil.(To get fluffy bhatura, splash oil over it and press the disc until the bhature puffs up fully. Fry it light golden from both side and drain off the bhatura

  7. Now It is ready to enjoy with yummy chole

For Chole Preparation

  1. In a pressure cooker add soaked chickpeas, baking soda, salt, turmeric and chopped onion and 2 cup water and pressure cook for 3 whistles in high flame and 1 whistle in low flame till chickpeas turns tender and soft.

  2. Now in a large wok, heat oil and add all whole spices like cumin seed, bay leaf, cinnamon stick, cardamom pods, cloves, etc. and saute on low flame for 1 minute .

  3. Now add chopped onion, saute it till onion turn light brown then add , ginger garlic paste and saute till the raw smell of ginger garlic disappears

  4. Now add all powder spices like turmeric powder, chilly powder, cumin powder, coriander powder and salt. Mix well

  5. Further add chopped tomato and saute them well. Sprinkle some water if required and cover and cook till tomatoes turn soft.

  6. Cook till oil separates and the mixture is cooked well. now add boiled chickpeas and mix well. adjust consistency by adding water and salt if required. cover and simmer for 10 minutes, or until chickpeas absorbs all the flavor.

  7. For tempering, heat 1 tbsp ghee in a pan. Add chilli, cumin seed and saute on low flame without burning the spices. Now pour it over the chole masala. Finely add chopped coriander and mix well.

  8. Your lip-smacking Chole is ready to serve with hot hot bhature. Enjoy
